Scour the dessert menu at any New Orleans restaurant, and you will find the amazing, mouth-watering Bananas Foster. Who can resist the warm, glazed dessert served over ice cream?

When going the skinny route, I changed up the dessert and use as a topping on my high fiber pancakes or waffles. While I use this delicious version as a topping on my high fiber pancakes, you can eat as a dessert or topping on Greek yogurt.

Skinny Bananas Foster Pancake Topping

Bananas Foster Pancake Topping
Serves: 4 Servings
Ingredients
  • 2 tablespoons butter
  • 1/4 cup of brown sugar
  • 1/4 cup of water
  • 4 medium bananas, sliced
  • 2 tablespoons of golden raisins
  • 1 teaspoon of almond extract
  • 1/4 cup chopped pecans
  • Light cool whip
Instructions
  1. In a large nonstick skillet, melt butter over low heat. Stir in brown sugar and water until blended.
  2. Remove from heat.
  3. Stir in bananas, raisins, almond extract and pecans. Cook over medium heat for 3-4 minutes.
  4. Divide mixture over pancakes.
  5. Top with light cool whip.
