Enchanted Ants on the Log

Remember ants on the log?

Ants on the log was one of the first recipes I can remember preparing. I vividly remember arriving home from school and cutting up celery, peanut butter and raisins then heading to the couch to watch Young and the Restless.

This morning, I had the opportunity to film on Fox 33 Good Day with our topic focusing on the 3pm snack attack.

The goal for our snacks is to look at a protein and fiber combination. Our protein will give us the focus we need for the rest of the day activities and our fiber will keep up full.

I decided to take a trip down memory lane for one of my favorite school snacks and update ants on the log to our ‘Enchanted Ants on the Log.’

We exchanged out our celery for an apple and added low-sugar granola (or rolled oats) for a high-fiber protein treat perfect for the 3pm slump.

Enchanted Ants on the Log

2 apples, each apple sliced into 4 slices
1/4 cup peanut butter
1/4 cup of low-sugar granola or rolled oats
1 teaspoon mini dark chocolate chips

  1. Spread peanut butter on one side of the apple.
  2. Sprinkle with granola (or rolled oats).
  3. Top with dark chocolate chips.
  4. Enjoy!
