It’s Spicy! Spinach Dip!

You won’t believe the simple, pantry-friendly ingredient swaps we used to make our It’s Spicy! Spinach Dip. This recipe is perfect for a quick snack fit for the entire family.

Where to Shop for Low Carb Ingredients

Before I go over ingredients, know the items used in this recipe can be found at many of your local supermarkets and Drug Emporium. Many of you know my love of Drug Emporium stores. Why use a slow cooker?

Slow Cooker. We love using the slow cooker in the Skinny Louisiana kitchen. Not only is the slow cooker easy to use, it is safe (no open flame), and energy efficient. Slow cookers consume as little as 150 watts per hour at a low setting and cut electricity cost for cooking by half. (and yes, I love to save money).

Slow cookers range in tons of shapes and sizes, but my personal slow cooker is a  6 quart Crock Pot since I can set the time and go!!!

It’s Spicy! Spinach Dip

This fun dip answers our quest for hot foods in the Skinny Louisiana kitchen. We gave this dip a heart-healthy spin by using light cream cheese and half and half and punched up the protein without adding carbs by stirring in Greek yogurt before serving. Serve with Shelly’s Skinny Chips or Beanitos to increase fiber. 

Ingredients:

  • 2 9 oz. pkg. frozen chopped spinach
  • 1 8 oz. pkg. light cream cheese (keto can use regular)
  • 1 cup half and half (keto can use Heavy Whipping Cream)
  • 1/2 onion, chopped
  • 1 tbsp. jalapeno peppers, chopped
  • 1 cup shredded mozzarella cheese
  • 1 tsp. Tabasco
  • 1 6 oz. container plain full fat Greek yogurt
  • Epic Pork Rinds

Directions:

  • Combine first seven ingredients in slow cooker.
  • Cover and cook on low for 2-3 hours.
  • Remove lid. Slowly add Greek yogurt to spinach mixture.
  • Serve with Epic Pork Rinds

Yield: 14, 1/4 cup servings.
