Six simple ingredients for crispy and low net carb mushrooms!

By now you all know my love for the Air Fryer. I am not ashamed to admit I love anything fried (even Twinkies) and ever since Jolly St. Nick delivered my Phillips Air Fryer on Christmas I have been experimenting with various fried food recipes.

Fried mushrooms was at the top of my list to try in the Air Fryer. A popular appetizer at many restaurants, we all know fried mushrooms are incredibly crunchy, delicious, yet a disaster for our waistline. My love of this dish was showcased during my wedding reception where our appetizer was, you guessed it, the fried mushroom.

Once reserved for my treat dates, I now know it IS possible to have fried mushrooms whenever I want. How? With my Low Net Carb Air Fryer Mushrooms!

Using simple ingredients (and one specialty ingredient) we take this from high-fat, high-calorie, high-carb dish to low-fat, low net carb crispy crunchy goodness. While I do love the fact the Air Fryer cuts down the fat, we have to keep in mind the carbs from our various flours. The change? We used Carbquik, a high-fiber flour available at Drug Emporium in Shreveport. If Carbquik is not available at your store – simple crush Fiber One or use almond meal as a substitute. I do keep a bit of Panko breadcrumbs for crunch, but for a lower carb product, feel free to eliminate.

I promise you will not be disappointed in these delicious, crispy mushrooms!

Low Net Carb Air Fryer Mushrooms

1 pkg button mushrooms, washed and dried
2-4 egg whites, whipped OR 1/2 cup 100% egg whites
1/2 cup grated Parmesan cheese
1/2 cup Carbquik* (use 1/2 cup crushed Fiber One or almond meal if you do not have Carbquik)
3 tbsp. Panko bread crumbs (you can eliminate to yield a lower carb product)
Non-stick cooking spray

In a small bowl, combine 2 tablespoons Parmesan cheese, Carbquik (or crushed Fiber One) and Panko bread crumbs.
Line 3 bowls – remain Parmesan cheese, egg whites, and Carbquik mixture.
Spray Air Fryer with non-stick spray.
Dip mushroom in Parmesan cheese, then egg white mixture, then Carbquik mixture. Shake any excess to ensure an even coating.
Line mushrooms in Air Fryer.
Spray with non-stick cooking spray.
Cook at 360 for 10 minutes.
Flip. Spray with non-stick cooking spray.
Cook at 360 for 7 minutes (or until desired crispness).

Yield: 4 servings.
