February 2, 2015Calling all football fans – I have an amazing dish utilizing your leftover Superbowl (or tailgating) goodies! Our guest cleared out the dips, chips, and wings, but what about the condiments?
More than likely, our refrigerator is stuffed to the max with various wing sauces and salad dressings. Instead of letting our condiments gather dust utilize them for this very simple (can we just say five ingredients!), spicy dish – my Skinny Buffalo Shrimp.
How did we ‘skinny’ this dish? We cooked our shrimp in only one tablespoon of olive oil (instead of the typical three to four) and used LIGHT ranch dressing.
Serve my Skinny Buffalo Shrimp with a steamed vegetable and you have a simple, tasty, spicy dinner for your family.
Skinny Buffalo Shrimp
Ingredients:
1 tablespoon olive oil
1 raw pound shrimp, peeled, defrosted
1/4 cup buffalo wing sauce (I used Frank’s)
1/4 cup light ranch dressing
Reduced fat blue cheese (optional)
Instructions:
- Pour olive oil into skillet. Heat over medium heat.
- Add shrimp. Cook until shrimp turn pink (approximately 5-7 minutes)
- Stir in buffalo wing sauce and ranch dressing.
- Cook 1-2 minutes.
- Remove from heat.
- Sprinkle with reduced-fat blue cheese.
- Serve with a steamed vegetable.
