With work, kids, and school, it is quite difficult to have a sit down breakfast. And if you are anything like me, I LOVE to get in any extra minutes of zzzzz. A quick, tasty, and filling breakfast is at the top of my priority list on a rushed morning.
Enter my ‘Skinny Cajun Breakfast Muffins!’ Many of these muffin recipes are floating around pinterest and Facebook, and of course, I had to add a bit of a Cajun twist!
Quick tip – double the batch. Freeze the leftovers in individual Ziploc bags and pop in the microwave on mornings you have to run out the door.
Skinny Cajun Breakfast Muffins

Ingredients
1 cup breakfast turkey sausage, chopped
1/2 onion, chopped
6 large eggs, beaten
1 cup 2% milk
1 cup shredded low-fat Mozzarella cheese
1 tsp Cajun seasoning
Instructions
Preheat oven to 350 degrees.
Spray non-stick cooking spray in 12 count muffin pan.
Combine turkey sausage, onion, eggs, 2% milk, Mozzarella cheese, and Cajun seasoning in a bowl.
Scoop mixture into individual muffin tins filling halfway.
