Skinny Cajun Buffalo Chicken Dip Text

What time is it? Superbowl time! Who is ready for the big game? Me? I am ready to watch the adorable Puppy Bowl and the commercials!

Earlier this week, I was on KTAL NBC 6 telling viewers how six buffalo chicken wings have more fat and calories than a Happy Meal. Shocking? Here is the scary, honest part – how many of us can sit and have only six wings during a four quarter, halftime performance, millions of time outs, and yes, those amazing commercials. I am going to go out on a limb and say we have six when we FIRST arrive to a Sueprbowl celebration, then continue to graze as the game continues.

The good news, as I told the viewers and am now sharing with you all, is I came up with two AMAZING food solutions for us to have our beloved buffalo chicken wings.

My first solution was my Skinny Buffalo Cauliflower Bites. Trust me – delicious!

My second solution is my Skinny Cajun Buffalo Chicken Dip.

We ‘skinny-ed’ this dip simply by using one block of 1/3 fat cream cheese and LITE ranch dressing. These two simple changes did not alter the flavor. In traditional buffalo chicken wing fashion, we added chicken breast (notice I didn’t say chicken wings or skin), wing sauce, shredded cheese, reduced fat blue cheese, and of course, cayenne pepper (I need a little touch of Louisiana in every dish I make).

I love to serve this dip with celery. The contrast of the spice, heat and cream mixed with the cool, crunch of the celery is an explosion of amazing in your mouth.

Skinny Cajun Buffalo Chicken Dip

Ingredients:

  • 1 package (8 ounces) of light cream cheese, softened
  • 1 can (10 ounces) chunk white chicken, drained OR 1 pound of diced chicken
  • 1/2 cup buffalo wing sauce
  • 1/2 cup light Ranch dressing
  • 1/2 cup shredded cheddar jack or pepper jack cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup reduced fat blue cheese
  • 1/4 teaspoon cayenne pepper
  • Celery

Directions:

  1. Preheat oven to 350.
  2. In a large bowl, combine all ingredients EXCEPT celery.
  3. Pour mixture into a shallow 1-quart baking dish.
  4. Bake, uncovered, 20-25 minutes.
  5. Serve with celery.
