Snow, snow, and more snow! The last 3 days in the Skinny Louisiana office have been filled with snow, ice, and sleet. While I want to stay under the blankets, my fun almost 4-year old wants to run out and play in it!
Well, I prefer she watch Frozen and not play in the snow while we munch on my fabulous Skinny Hot Crawfish Dip. This dip combines cool cream with a bit of spice and of course Louisiana crawfish – all of what Skinny Louisiana embraces!
Traditional ingredients in a hot dip:
- 1/2 cup butter – increases calories and saturated fat
- Cream cheese – increases calories
- Crackers – high in carbs, no fiber
How did we ‘skinny’ this dip?
- Decreased butter to 2 tablespoons – decreases calories and saturated fat
- Use of 1/3 fat cream cheese – decreases calories
- Added spinach – increases vitamin A
- Use of Fiber Gourmet Crackers or Kashi Pita Crisp – increase fiber
Remember, we love our fiber! Any way we can add fiber to a recipe – we are keeping ourselves FULL! (hello weight loss!)
This skinny hot crawfish dip is sure to please your entire crowd and is lent friendly. Serve for your entire family, for a girls night in, or for a great tailgating party.
Skinny Hot Crawfish Dip
Ingredients:
2 tablespoons butter
1 bell pepper OR yellow pepper, diced
2 cups of spinach (can use fresh or frozen)
1 teaspoon of Cajun seasoning
1 block of 1/3 fat cream cheese
1 pound of frozen cooked crawfish, thawed and drained
Fiber Gourmet crackers OR Kashi Pita Crisp
Directions:
- In a sauce pan, melt butter over medium heat.
- Add bell pepper and cook for 5 minutes. Add spinach and seasoning. Cook for an additional 3 minutes.
- Stir in the crawfish and cook for 8-10 minutes.
- Reduce heat to low and stir in cream cheese.
- Stir until cream cheese melts.
- Serve with high fiber crackers.
