January 29, 2015Welcome to the month of wearing a coat one day and reaching for shorts the next. Yes, I am talking about January. With the bizarre weather patterns, I always find it difficult to get any type of fruit in my routine. Mainly, I am more confused to pick the fruits that are in season verses the ones not in season. By the time January hits, I am over apples and pears (from Thanksgiving and Christmas), yet I sometimes need a change from my frozen berries.
Enter the grapefruit. While it may seem odd since the grapefruit is citrus, the grapefruit is very much in season during the month of January. Finding the grapefruit in any local grocer is quite easy, but enter our second problem, grapefruits can be quite sour and boring.
Not so with our Skinny Winter Grapefruit Salad. No fear, this salad has no sour flavor yet has a hint sweetness from a dash honey and amazing flavor with our mint. We continue with a little protein (and Louisiana flare) with pecans and fiber from our pomegranate seeds. The ending result – we have an amazing salad that looks great, smells great, and taste great.
Skinny Winter Grapefruit Salad
Ingredients:
- 2 red grapefruits, peeled and sliced into sections
- 2 pink grapefruits, peeled and sliced into sections
- 1 cup pomegranate seeds
- 3 tablespoons honey
- 1/2 cup chopped pecans
- 1/4 cup mint, chopped
Directions:
- In a large bowl, combine red grapefruit, pink grapefruit, and pomegranate seeds.
- Add honey, gently combine.
- Add pecans, gently combine.
- Dish. Sprinkle with mint. Serve.
