Using the slow cooker, we took our traditional high carb pizza to a low carb family favorite by eliminating the crust without losing the flavor.
Equipment Needed in our Slow Cooker Low Carb Pizza Casserole
Slow Cooker. We love using the slow cooker in the Skinny Louisiana kitchen. Not only is the slow cooker easy to use, it is safe (no open flame), and energy efficient. Slow cookers consume as little as 150 watts per hour at a low setting and cut electricity cost for cooking by half. (and yes, I love to save money).
Slow cookers range in tons of shapes and sizes, but my personal slow cooker is a 6 quart Crock Pot since I can set the time and go!!!

Before I go over ingredients, know the items used in this recipe can be found at many of your local supermarkets and Drug Emporium. Many of you know my love of Drug Emporium stores. Low Carb Slow Cooker Pizza Casserole Ingredients
- Lean turkey ground
- Shredded mozzarella cheese (part-skim)
- Mushrooms
- Rao’s Sensitive Marinara Sauce
- Swiss cheese
- Pepperoni slices
- Cauliflower rice
Low Carb Ingredient Substitutions in our Slow Cooker Low Carb Pizza Casserole
Rao’s Sensitive Marinara Sauce. This sauce is AMAZING! It has 3 grams of net carbs per serving and is absolutely delicious.
How to Store our Slow Cooker Low Carb Pizza Casserole
I highly doubt you will have any leftovers, but you can store in the refrigerator in any reusable plastic container with a lid. You can freeze the pizza casserole for for 2-3 months.
Low Carb Slow Cooker Pizza Casserole Recipe
Ingredients:
- 1 lb. lean turkey ground (93/7)
- 1 cup shredded mozzarella cheese
- 1, 4oz can mushrooms drained
- 1/2 jar of low-sugar marinara sauce (we used Rao’s)
- 2 slices of Swiss cheese (in small pieces)
- 10-20 low-sodium or nitrate free pepperoni slices (Applegate)
- 1 pkg. frozen cauliflower rice (optional)
Directions:
- Line slow cooker with a slow cooker liner.
- Combine turkey ground, mozzarella cheese, mushrooms. Press in bottom of slow cooker.
- Layer with remaining ingredients.
- Cover and cook on low for 5-6 hours.
- Serve over cauliflower rice.
Yield: 6 servings

Calories: 270, Total fat: 18g, Saturated fat: 6g, Cholesterol: 75mg, Sodium: 480 mg, Carbs: 6g, Fiber: 1g, Protein: 22g.
NET CARBS: 5g
Carb count exclude sugar alcohols. New carb count is determined with the equation total carbohydrate – total fiber – sugar alcohol.
