Question Time: Who loves radish?
Radish is one of those vegetables that makes one raise their eyebrows. For the last 15 years, I have been counseling individuals on various nutrition topics (the last 4 years my focus is strictly weight loss and diabetes counseling), and when I show folks a list of vegetables, the radish gets the eyebrow and question, ‘How does it taste?’
Here’s the great news – I was an eyebrow raiser. It took Mr Skinny Louisiana to show me the fabulousness of the radish. Early in our relationship, we were shopping at the grocery store and he simply picked up the curious vegetables and took a bite. ‘That’s a good radish.’ My eyebrow rose. I took the plunge and decided to take a bite as well (of course after we arrived home and I washed the radishes). And yet again, my eyebrow rose.
Radishes are a hard win, but I was determined to make this low carb veggie work in the Skinny Louisiana kitchen. Time to bring out the Skinny Louisiana drawing board. I had a few challenges – I had to make sure I did not burn the radishes AND I had to cross my fingers the flavor of a radish did not get stronger as I cooked the low carb vegetable. Of course, for crunch, I pulled out my trusty Air Fryer and oven. The result does not disappoint!
What are the Carbs in Radish?
Radish is an ultimate low carb vegetable yielding less than 1 gram of carb per 1 radish.
How to Clean and Prep a Radish?
After washing radishes, grab a sharp knife. Trim off any leaves. Cut the radish and half and cut into thin rings. Need a time saver, radish coins are available in the produce section of many local supermarkets, and I must admit I used these in our recipe.
Where to Shop for Low Carb Ingredients
Before I go over ingredients, know the items used in this recipe can be found at many of your local supermarkets and Drug Emporium. Many of you know my love of Drug Emporium stores. Not only does Drug Emporium have amazing prices (often the cheapest in town), I work with this amazing company in putting on Low Carb Food Demonstrations and product selection for shelves. All my items in the recipes are from Drug Emporium. For a full list of Drug Emporium store locations, click here. No Drug Emporium in your town? No worries, you will be able to find these ingredients at your local supermarket.
What Air Fryer Do I Use?
I love my Air Fryer! Many of you have posed the questions, ‘What Air Fryer do you have?’ ‘What is your favorite brand of Air Fryer?’ I have a basic Phillips Air Fryer and love it. I encourage folks to shop around and see what Air Fryer fits their needs. I must confess, I now own 2 Air Fryers. For Christmas, I received a Ninja Foodi, and I love this bad boy! By now, you all know my obsession with my Air Fryer with one of my favorite recipes as my Low Carb Air Fryer Okra.
