Low Carb Cheesy Cauliflower Breadsticks

These four-ingredient breadsticks are low-carb, tasty, and star our friend, riced cauliflower.

Breadsticks, pizza, and pasta – oh my! So many folks walk into my office exclaiming, ‘I can never have pizza again!’

No worries, Skinny Louisiana is here to save the day! It’s time to kiss delivery pizza good-bye and replace it with our simple Low-Carb Cheesy Cauliflower Breadsticks. 

In this simple recipe, we use a popular ingredient, riced cauliflower, as our flour to give us back our pizza nights.

You can find riced cauliflower in your freezer section of your favorite grocery stores (Green Giant and Birdseye are my favorites), and as always, look for a lower-sugar pizza sauce. My go-to is Cadia Pizza Sauce sold at Drug Emporium/Vitamins Plus.  This pizza sauce is low-sugar, low-carb an incredibly delicious dipping sauce perfect for our breadsticks. No Drug Emporium in your town? Look for a pizza sauce with less than five grams of carbs per serving.

Low Carb Cheesy Cauliflower Breadsticks

2 pkg. frozen riced cauliflower

2 eggs

1 1/2 cup shredded mozzarella

1/4 cup Parmesan, grated

Cadia Pizza Sauce

Directions:

  1. Preheat oven to 425. 
  2. Line a baking sheet with non-stick aluminum foil
  3. Microwave riced cauliflower according to package directions. DRAIN access liquids.
  4. In a large bowl combine cooked riced cauliflower, eggs, 1 cup of mozzarella, and Parmesan.
  5. Spread mixture on baking sheet.
  6. Bake for 20 minutes.
  7. Remove from oven and sprinkle on remaining cheese.
  8. Bake for an additional 10 minutes.
  9. Remove from oven.  Cut into sticks. Serve with pizza sauce.

Yield: 10 servings

Nutrition facts: Calories: 140, Total fat: 8g, Total carbs: 4g, Fiber: 1g.
