You won’t believe the simple, pantry-friendly ingredient swaps we used to make our Slow Cooker Cauliflower Casserole into a low carb dish. This recipe is perfect for a quick weeknight side the entire family will love.

Cauliflower is the low-carb staple replacing rice in many of our dishes, but after a while, cauliflower rice can be bland and….BORING! Chicken, green beans, and steamed cauliflower rice is pretty lackluster, so I had the desire to give a wow factor to traditional cauliflower!

In taking cauliflower and cauliflower rice to the low carb drawing board, I wanted to add lots of flavor and make my entire family happy. Pull out that slow cooker, a bit of cheese, and some Tony’s Chachere’s and we have a WINNER!

WHERE TO SHOP FOR LOW CARB INGREDIENTS

Before I go over ingredients, know the items used in this recipe can be found at many of your local supermarkets and Drug Emporium. Many of you know my love of Drug Emporium stores. WHY USE A SLOW COOKER

Slow Cooker. We love using the slow cooker in the Skinny Louisiana kitchen. Not only is the slow cooker easy to use, it is safe (no open flame), and energy efficient. Slow cookers consume as little as 150 watts per hour at a low setting and cut electricity cost for cooking by half. (and yes, I love to save money). (Thanks SWEPCO for the info!)

Slow cookers range in tons of shapes and sizes, but my personal slow cooker is a  6 quart Crock Pot since I can set the time and go!!!

INGREDIENTS IN OUR LOW CARB SLOW COOKER CAULIFLOWER CASSEROLE (KETO FRIENDLY) RECIPE

  • 1 pkg frozen cauliflower rice
  • 1 pkg frozen cauliflower
  • 1/2 cup Heavy Whipping Cream (non keto can use half and half)
  • 2 cups shredded cheddar cheese (watch carbs)
  • 1 8 oz. block of cream cheese (non keto can use light cream cheese)
  • 2 tsp Tony Chachere’s Spice N Herbs Seasoning Blend
  • 2 slices Applegate bacon, crumbled

Tony Chachere’s Spice N Herbs Seasoning Blend

  • Looking for flavor? I will be the first to agree, foods without salt that use other ‘salt substitutes’ are … terrible. I’m Cajun. I need flavor. I need my food to taste seasoned! Containing zero carbs AND a whole lot of kick, Tony Chachere’s Spice N Herbs Seasoning Blend gives this dish a POW without hiking up the sodium content. 

2% Shredded Cheddar Cheese

  • While my keto friends will opt for the full fat version of this cheese, low carb can enjoy saving calories by using a 2% version. 

Cream Cheese

  • While my fabulous keto friends will keep the full-fat versions of cream cheese (please do if you are following keto), I used a light cream cheese to keep the calories down in this dish (yes, I look at calories). No fear, light cream cheese does not have any added sugar. Light cream cheese is a healthy alternative to cream cheese with 35 calories tablespoon compared to 51 calories in 1 tablespoon of cream cheese.

Riced cauliflower

  • Grits is a must in this dish, but in the low carb world grits makes us run away, very fast. 1/2 cup of cooked rice yields 26 grams of carbs. Enter our amazing vegetable, the cauliflower. From pizza to bread, cauliflower is an amazing substitute for both rice and grits. Riced cauliflower is available frozen or in the produce section of the stores.

Heavy whipping cream

  • With the main purpose of a thickening agent, whipping cream gives our dish a ‘creamy’ texture. Heavy whipping cream has only 1 gram of carb per tablespoon serving. No worries, we don’t go overboard on this product.

HOW TO STORE OUR LOW CARB SLOW COOKER CASSEROLE

I highly doubt you will have any leftovers, but you can store it in a simple covered container.

LOW CARB SLOW COOKER CAULIFLOWER CASSEROLE (KETO FRIENDLY) RECIPE

Ingredients:

  • 1 pkg frozen cauliflower rice
  • 1 pkg frozen cauliflower
  • 1/4 cup Heavy Whipping Cream (non keto can use half and half)
  • 1 cup shredded cheddar cheese (watch carbs)
  • 1 8 oz. block of cream cheese (non keto can use light cream cheese)
  • 2 tsp Tony Chachere’s Spice N Herbs Seasoning Blend
  • 2 slices Applegate bacon, crumbled (optional)

Directions:

Cut cream cheese into small cubes. Combine all items except bacon in slow cooker.

Cover. Cook on low for 2-3 hours.

NUTRITION FACTS (1 cup serving) 

Calories: 258, Fat: 16g, Cholesterol: 57.5g, Sodium: 215mg, Carbs: 5.9g, Fiber: 1.5g.

NET CARBS: 4 GRAMS

Carb count exclude sugar alcohols. New carb count is determined with the equation total carbohydrate – total fiber – sugar alcohol.
