Skinny Cajun Asian Slow Cooker Tacos

 

This high-fiber, protein rich slow cooker pork dish is perfect for any taco night celebration. An even better reason to try? 15 total net carbs!

Brrr….

The cold air has come entered Skinny Louisiana headquarters! Cold weather is perfect weather for our slow cooker. I just love the aroma in the air from a slow cooker dish. Nothing is better!

For these cold days, dig into your freezer (gloves optional) and use what is available in your freezer and have fun creating a new dish. The following recipes, Skinny Asian Cajun Slow Cooker Pork Tacos transform a traditional taco night into a night of amazing flavors and deliciousness.

I will be the first to admit, I love family taco night! Lots of laughter and good food. However, some of the food can affect our waistline.

Traditional taco night spoilers include:

  • Taco Shells – high in calories, fat, low in fiber
  • Sour cream – high in calories and fat

The ‘skinny’ swaps we made for our new dish:

  • Mission Carb Balance Wraps – high in fiber
  • Pork loin – great source of protein

This dish taste and look amazing. For those who are nervous about the dish being too spicy, do not add Sriracha sauce to your taco. My choice of taco? Go for the Mission Carb Balance Wrap for the huge amount of fiber!

Ingredients

1 4-5# pork loin
1 tablespoon of canola oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cayenne pepper
2 teaspoons of Asian seasoning
1 cup BBQ sauce (look for lowest in carbs)
Red cabbage, shredded
1/2 cup light mayo
Sriracha sauce
1/2 cup cilantro, chopped
Mission carb balance wraps

Directions:

  1. Place pork loin in slow cooker.
  2. Top with canola oil, salt, pepper, cayenne pepper, Asian seasoning and BBQ sauce.
  3. Cook on low heat for 6 hours.
  4. Remove and shred with a fork.
  5. Layer pork in Mission carb balance wrap with light mayo, sriracha sauce, cabbage, and cilantro.
  6. Enjoy!
