Skinny Cajun Breakfast Muffins

These flour-free, low-carb, protein-rich muffins are perfect for the egg lover in all of us! Make a large batch of these diabetic-friendly muffins and store in individual freezer bags to pop in the microwave for those quick mornings.

With work, kids, and school, it is quite difficult to have a sit down breakfast. And if you are anything like me, I LOVE to get in any extra minutes of zzzzz. A quick, tasty, and filling breakfast is at the top of my priority list on a rushed morning.

Quick tip – double the batch. Freeze the leftovers in individual Ziploc bags and pop in the microwave on mornings you have to run out the door.

Ingredients
  • 1 cup breakfast turkey sausage, chopped
  • 1/2 onion, chopped
  • 6 large eggs, beaten
  • 1 cup 2% milk
  • 1 cup shredded low-fat Mozzarella cheese
  • 1 tsp Cajun seasoning
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray non-stick cooking spray in 12 count muffin pan.
  3. Combine turkey sausage, onion, eggs, 2% milk, Mozzarella cheese, and Cajun seasoning in a bowl.
  4. Scoop mixture into individual muffin tins filling halfway.
  5. Bake 20-25 minutes OR until brown on top.
  6. Remove from pan and serve!
