I love breadsticks! Yes, I know! Nothing is better than a dough-y crust and gooey cheese. For some of us, this obsession has left us with our teenage years, but not me. I know I share this love with many of you all.
This slight obsession that can spell bad news for our waistline. The flour and the butter (or lard) can spell lots of carbs, fat, and calories.
Until……the world was introduced to our great friend, the cauliflower! Move over kale, cauliflower is taking over. In the last few weeks, I have seen (as I am sure you all have) the tons of articles and recipes utilizing cauliflower as a starch.
I decided to test this theory with my beloved breadsticks. I found tons of recipes, but many of the recipes had tons of ingredients. As always, I look at simplicity and how can I take my ‘Skinny Louisiana’ spin. My ingredients are simple, the recipe is easy, and the taste is amazing! You must try these!
Skinny Cajun Cheese Cauliflower Sticks
Ingredients:
1 head of cauliflower, chopped in florets
3 eggs
2 1/2 cups of shredded 2% mozzarella cheese
1 tsp of Cajun seasoning
1 tsp of dried oregano
Directions:
- Preheat oven to 400 degrees.
- Line a 9 x 13 baking sheet with non-stick aluminum foil.
- Place cauliflower in food processor. Pulse until cauliflower is rice consistency.
- Place cauliflower in microwaveable bowl. Microwave 5 minutes. Remove and stir.
- Microwave 5 minutes. Remove and stir.
- Add 3 eggs, 2 cups of mozzarella cheese, cajun seasoning, and oregano. Stir.
- Pour mixture on lined baking sheet.
- Bake for 25-28 minutes.
- Remove. Sprinkle with mozzarella cheese. Return to oven for 5 minutes.
- Remove and serve!
