Looking for a great summer dish? These mushrooms are tasty, gorgeous, are a good source of fiber, and full of….crab and perfect for any summer entertaining event!

Seafood is the perfect protein in the eyes of Skinny Louisiana. A 3-ounce serving is only approximately 65 calories while offering over 14 grams of protein.

Crab stars in these stuffed mushrooms and we continued our skinny twist with another secret – Fiber One! Traditionally, stuffed mushrooms are loaded with bread crumbs (hello carbs), but we use one of my favorite secrets – Panko bread crumbs are lower in carbs than regular bread crumbs mixed with our crushed Fiber One!

12Spectacular Skinny Crab Stuffed Mushrooms

Ingredients:

1 cup crabmeat
1/2 block light cream cheese
1/2 cup parsley, chopped
1/2 onion, chopped
1/4 cup low-fat grated Parmesan cheese
1/4 cup shredded low-fat mozzarella cheese
1/2 teaspoon light Creole seasoning (we used Tony’s Light)
2 tablespoons Panko breadcrumbs (I used Kikkoman)
2 tablespoons crushed Fiber One cereal
4 portabello mushrooms, washed

Directions:

  1. Preheat oven to 375 degrees.
  2. Combine crabmeat, light cream cheese, parsley, onion, Parmesan, mozzarella cheese, Creole seasoning, Panko breadcrumbs and Fiber One.
  3. Spray baking sheet with non-stick cooking spray.
  4. Place mushrooms on baking sheet.
  5. Spoon mixture into mushrooms.
  6. Bake for 15-20 minutes.
  7. Remove from oven.
  8. Cool and serve.
