Skinny 'Grown-Up' Crispy Treat

This is a week of ‘remember when!’ I am not sure if I am thinking this way since it is back-to-school time, but I am having a fun time making over some ‘retro’ recipes.

I don’t know about you, but I LOVED rice crispy treats as a child. I love the ooey, the gooey and the crunch of the treat. (insert sticky fingers)

I look at my 4-year old and see her eyes shine with delight when she sees a rice crispy treat, so I wondered, could I make these a bit better? I was shocked when I realized how easy it is to get rid of the extra calories and fat PLUS hike up the fiber without sacrificing flavor.

Enter these amazing Skinny ‘Grown-Up’ Crispy Treats! Simply by using honey, peanut butter, pecans and a high-fiber cereal, we added a nice bit of nutrients. The Fiber One cereal and oats provide fiber, while our peanut butter and pecans are good sources of both protein and monounsaturated fats.

You will not be disappointed with this recipe!

Skinny’Grown-Up’ Crispy Treats

1 cup high-fiber flake cereal (we used Fiber One)
1 cup oats (quick cook)
½ cup honey
¾ cup of peanut butter
1 tablespoon vanilla
½ cup chopped pecans

1-Line an 8×8 dish with parchment paper or no-stick aluminum foil.
2-Combine all ingredients in a bowl. Stir until flakes and oats are coated.
3-Transfer mixture into lined dish.
4-Cut into bars.
5-Place into refrigerator for an hour.
6-Serve!
