Ingredients
  

  • 1 ½ cups cottage cheese
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 tsp baking powder

Instructions
 

  • Add the cottage cheese, eggs, vanilla, and baking powder to a blender.
  • Blend until smooth and creamy, about 20–30 seconds.
  • Heat a nonstick or lightly greased skillet over medium heat.
  • Pour the batter into the pan in small rounds.
  • Cook 3–5 minutes, flipping once bubbles form and the edges set.
  • Serve warm with your favorite low-carb toppings.
