Ingredients
  

  • 2 tablespoons butter
  • ¼ cup Greek yogurt
  • ¾ cup Swerve brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¾ cup almond flour
  • ¾ cup all-purpose flour
  • ½ teaspoon salt
  • 1 cup chopped pecans

Instructions
 

  • Preheat the oven to 350°F.
  • Line a baking sheet with parchment paper.
  • In a medium bowl, combine butter, Greek yogurt, Swerve brown sugar, and egg.
  • Stir in vanilla extract.
  • Add almond flour, all-purpose flour, and salt, mixing until combined.
  • Fold in chopped pecans.
  • Using a 2-tablespoon cookie scoop, portion dough onto the prepared baking sheet.
  • Bake for 12–14 minutes, or until lightly golden.
  • Remove from oven and cool on a wire rack.

Notes

These cookies firm up as they cool. For a lower carb version, replace the all-purpose flour with additional almond flour. Store in an airtight container at room temperature for up to 3 days or freeze for later.
