Skinny Garlic Shrimp

Looking for a great date night or girls-night-in dish?  My Skinny Garlic Shrimp is the perfect dish for such an event.  It’s quick, tasty, and healthy.

While traditional versions of garlic shrimp grace the appetizer menus of our local restaurants, these dishes are often served with a crusty slice of French bread yielding in a high carbohydrate meal.

In this tasty, skinny version we lose the bread and switch out the butter for our heart-healthy olive oil. No worries about finding shrimp, many local grocery stores carry shrimp in the deli and frozen section.

Trust me, you won’t miss the bread!

 

Skinny Garlic Shrimp
Serves: 6 Servings
Ingredients
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, peeled and chopped fine
  • 1/2 onion, peeled and chopped fine
  • 1 lemon, unpeeled, cut into small wedges
  • 2 bay leaves
  • 1 pound of Louisiana shrimp, uncooked and peeled
Instructions
  1. Place oil pan over medium high heat.
  2. Add garlic, onion, lemon and bay leaves. Sauté for 5 minutes.
  3. Add shrimp.
  4. Stir and cover. Cook shrimp for 3 minutes.
  5. Reduce heat the medium and cook for 10 minutes.
  6. Remove pan from heat. Let set for 15 minutes.
  7. Serve.
