Healthy Crawfish Spinach Dip (High Protein & Diabetic Friendly)

A creamy, diabetic-friendly Louisiana crawfish spinach dip made with Greek yogurt, light cream cheese, and Cajun seasoning. Ready in 25 minutes — perfect for Mardi Gras, game day, or any gathering.

- 1 tbsp butter
- 1 green bell pepper diced
- 2 cups fresh spinach
- 1 tsp to 1 tbsp light Cajun seasoning to taste
- 1 lb cooked Louisiana crawfish tails drained
- 8 oz light cream cheese
- 1 6 oz container plain Greek yogurt
Melt butter in a large saucepan over medium heat.
Add diced bell pepper and cook for 5 minutes until softened.
Stir in spinach and Cajun seasoning. Cook 3 more minutes until spinach is wilted.
Add drained crawfish tails. Cook 8-10 minutes, stirring occasionally.
Reduce heat to LOW. Add light cream cheese and stir until melted and smooth.
REMOVE pan from heat.
Stir in Greek yogurt until creamy and combined.
Serve warm with vegetables and high-fiber crackers.
- Always add Greek yogurt OFF the heat to prevent curdling.
- Use Louisiana crawfish for best flavor.
- Adjust Cajun seasoning to your spice preference.
- Refrigerate leftovers for 3-4 days. Not freezer-friendly.
