Healthy Crawfish Spinach Dip (High Protein & Diabetic Friendly)

A creamy, diabetic-friendly Louisiana crawfish spinach dip made with Greek yogurt, light cream cheese, and Cajun seasoning. Ready in 25 minutes — perfect for Mardi Gras, game day, or any gathering.

Ingredients
  

  • 1 tbsp butter
  • 1 green bell pepper diced
  • 2 cups fresh spinach
  • 1 tsp to 1 tbsp light Cajun seasoning to taste
  • 1 lb cooked Louisiana crawfish tails drained
  • 8 oz light cream cheese
  • 1 6 oz container plain Greek yogurt

Instructions
 

  • Melt butter in a large saucepan over medium heat.
  • Add diced bell pepper and cook for 5 minutes until softened.
  • Stir in spinach and Cajun seasoning. Cook 3 more minutes until spinach is wilted.
  • Add drained crawfish tails. Cook 8-10 minutes, stirring occasionally.
  • Reduce heat to LOW. Add light cream cheese and stir until melted and smooth.
  • REMOVE pan from heat.
  • Stir in Greek yogurt until creamy and combined.
  • Serve warm with vegetables and high-fiber crackers.

Notes

  • Always add Greek yogurt OFF the heat to prevent curdling.
  • Use Louisiana crawfish for best flavor.
  • Adjust Cajun seasoning to your spice preference.
  • Refrigerate leftovers for 3-4 days. Not freezer-friendly.
