Crunchy Celery & Apple Peanut Butter Snacks

Need a little inspiration for an after school snack or 3pm work snack? Put down that boring fruit and try my Crunchy Celery & Apple Peanut Butter Snacks.

While we love fruit in the Skinny Louisiana kitchen and many are great sources of fiber, fruit alone is not the best snack to keep us full and for weight loss efforts. What works on keeping us full, keeping us focused, and keeping our waistline small? We need a protein and fiber combination.

My Crunchy Celery & Apple Peanut Butter Snacks are a great answer to the fiber + protein snack combination. For an added crunch and a little more fiber, we sprinkled Kashi Go Lean Cereal on top!

This snack is super easy, super tasty and of course, pantry-friendly!

Ingredients:

  • 1 apple, washed and sliced into 6 slices
  • 2 stalks of celery, washed and sliced into thirds
  • 2 tablespoons smooth peanut butter (I used Simply Jif)
  • 2 tablespoons Kashi Go Lean Cereal
  • Mini dark chocolate chips (optional)

Directions:

  1. Spread 3/4 teaspoon of peanut butter onto apple and celery slices.
  2. Sprinkle Kashi Go Lean Cereal on top.
  3. Sprinkle dark chocolate chips on top.
  4. Enjoy!
