It is no secret – I love dessert. My love affair with dessert began when I was in diapers, and when I craved dessert, I would climb the walls for dessert. My fondest memory of dessert include breaking into the cabinets with a spoon, opening a can of cocoa powder, and taking a large bite. My dreams of eating chocolate out of container was crushed when my mouth was filled with the lovely flavor of bitter. After I dried my tears, I took a dessert stand! When I wanted dessert, I wanted sweet.
Fast forward a few years to the lovely 90s – bad makeup, grunge, and fat-free. I would feel the sense of nails on the chalkboard every time I would hear a health profession suggest eating sherbet or angel food cake. Memories of my cocoa power bitter party floated in my head as I approached the ‘bundt’ wanna-be angel food cake contraption and its cousin, sherbet. ’It’s fat-free’ was always the push where I had to respond, ‘but it is not sugar-free and taste terrible.’
From a dessert stand to a mission, I would learn to develop desserts that decrease both fat AND sugar WITHOUT using artificial sweeteners PLUS have an amazing flavor and appeal.
My Skinny Chunky Monkey Dip is an answer to our dessert prayers. I combine flavors we all love: chocolate, peanut butter, and cream cheese. Sounds fattening? Don’t panic. Here is the ‘secret’ ingredient of this Skinny Louisiana recipe: 1/2 mashed banana.
How did we skinny this recipe? Simple. We reduced the fat by replacing regular cream cheese with a block of 1/3 fat cream cheese while adding some great fat with our omega-3 rich walnuts. In addition, while many dip recipes call for up to 2 cups of powdered sugar, we cut down the sugar to only 1/2 cup combine with our 1/2 mashed banana.
This chilled, sweet dip taste amazing and is great for any party, girls night in, or for a Lifetime Movie Marathon.
