This pantry-friendly, high-fiber, slow cooker soup will keep you warm on chilly winter days!

Hi friends!

Nothing feels better on a cold winter day than a warm bowl of soup. This low-stress soup uses one of my favorite kitchen tools, the slow cooker. Made with both pantry-friendly and freezer-friendly items, this soup is sure to warm anyone up on a chilly day.

How did we skinny this recipe? We keep sodium down by using a low-sodium taco seasoning and low-sodium chicken broth. We hiked up with fiber with our Louisiana superfood, the red bean, as well as keep the carb count lower by using a small can of corn. (NOTE – Phase 1 and 2 on the Skinny Louisiana plan, omit the corn).

Slow Cooker Skinny Chicken and Tomato Soup

Ingredients:

1 lb. frozen pre-cooked chicken (we used cubed)
2 cans (14.5 oz.) diced tomatoes
1 pkg. frozen onion and peppers
2 cans (14.5 oz.) low-sodium chicken broth
1 can (14.5 oz.) red beans, drained and rinsed
1 can (8.5 oz.) corn, drained and rinsed
1 tsp minced garlic
2 tbsp low sodium taco seasoning

Combine all ingredients in slow cooker. Cook on low for 4-6 hours. Serve.
